Grilled Chipotle Garlic Chicken

About as easy as it gets. Great flavor, nicely spiced. Serves 6 people.

    Ingredients:

  • 1 cup Ring of Fire Chipotle Roasted Garlic Hot Sauce
  • 2 tablespoons olive oil
  • splash of lemon juice (1 to 2 teaspoons)
  • 3 pounds chicken (any kind: breasts, thighs, drumticks, etc.)
  • Salt & pepper, to taste
  • 1 jar Jump Up & Kick Yo Butt Habanero Salsa (or your favorite hot salsa)

Blend lemon, olive oil, and hot sauce in a small bowl. Salt & pepper both sides of chicken. Mop hot sauce blend onto one side of chicken and place on grill (basted side down) or broiling rack in oven (basted side up). If grilling, mop unbasted side (if broiling turn first, then baste) then turn after 10 minutes or when chicken is browned on side towards fire.

Remove fom fire when both sides are browned or when inside is no longer pink. Top with a bit of the salsa or serve it on the side.
