Just when I was getting over the recent excitement of the Bacon Explosion, this month’s Wired magazine introduced me to Baconnaise, a spreadable hammy condiment that I had to get my hands on immediately to test and review.

A recipe has recently surfaced on the web that is garnering more attention and web traffic than any White Castle stuffing recipe or Absolutely Ridiculous Burger ever could. That recipe is for the Bacon Explosion from BBQ Addicts.

Thick bacon wrapped around tender chicken breasts with cream cheese centers. Serves six people.

I first enjoyed this morsel in a funky restaurant/bar downtown in Manhattan. They are a terrific starter or a party dish. The level of heat depends on the heat of the pepper. These little buggers can burn you mouth so be careful, especially if you’re using the merciless peppers of Quetzlzacatenango! Grown deep in the jungle primeval by the inmates of a Guatemalan insane asylum.
