Look at that picture… how could you not appreciate a cookbook with a big fatty slab of meat on the cover?  Although we have no connection to author Jennifer Mclagan, we dig the main ingredient in her book Fat: An Appreciation of a Misunderstood Ingredient, With Recipes.

Breaking the topic down into categories (butter, pork, poultry, beef-and-lamb), McLagan chooses recipes that showcase the role of fat in imparting and carrying flavor. The recipes may be a bit more complicated than the average Brian’s Belly chef may like to endure, but if you like all things buttery, this might be for you.
