One in a Hundred BBQ Sauce

Now I’m from down in Louisiana. When you’re born on the bayou, your Momma don’t give you no suckling milk from her teat, she gives you BBQ sauce. Hot stuff. Get you started off right, hear? I’ve spent most of my adult life tryin to git this recipe right and now I’m passing it on to y’all. I call it my “One in a Hundred Sauce” or “All Purpose Bourbon Q Sauce” I’ve never really taken the time to calculate exact measurements but always mix it together and look for the color and consistency I’m in the mood for that day. The following are estimated measurements.

    Ingredients:

  • 1 Tablespoon of Tabasco sauce or yer favorite hot sauce
  • 1 Teaspoon of Zatarain’s Creole Seasoning
    (can sometimes substitute Italian seasoning)
  • 1 cup of beef broth
  • 1/4 cup of brown sugar (firmly packed)
  • 8 ounce can of tomato sauce or paste, depending on consistency you’re looking for
  • Bourbon – you decide how much

Dissolve the brown sugar in the beef broth over a low flame and simmer. Add yer seasoning and hot sauce and tomato paste/sauce. Let it cool to room temperature or thereabouts and add bourbon.

Now it can be used for marinade, basting, barbecue sauce, or add cornstarch or flour to thicken for use as gravy.

Oh by the way, the reason I call it “One in a Hundred Sauce” is that’s how many times it comes out perfect. Can’t ever get it as good as Momma’s.
