Salsa Secreto

Salsa made in the traditional style with a secret ingredient. Serves about 8 people.

    Ingredients:

  • 1 quart cherry tomatoes
  • 1 medium green pepper – coarsly chopped
  • 1 medium onion – coarsly chopped
  • 1 or 2 jalapeno peppers
  • 2 cloves garlic
  • 1/3 cup vinegar
  • 2 tablespoons Bite Me Lime Cilantro Hot Sauce
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 pinch dried oregano
  • 1 pinch ground cumin

In blender or food processor, coarsely chop unpeeled tomatoes. Add green pepper, onion, jalapenos, and garlic to tomatoes; process until vegetables are finely chopped.

Stir vinegar, Bite Me Lime Cilantro Hot Sauce, salt, and sugar into vegetable mixture. Transfer vegetables to a 3 quart saucepan. Simmer, uncovered, over low heat about 25 minutes or until desired consistency is achieved. Stir in oregano, and cumin; season to taste with salt.

Store in refrigerator in tightly covered container.
